Sauces and Salsas

 
  • 1/2 c sugar
    ¼ c hot water
    1 Tbs cornstarch
    2 Tbs fresh lemon juice
    ½ tsp cinnamon
    2 c fresh blueberries
    ¼ tsp nutmeg

    In small saucepan, combine sugar, cornstarch and spices; gradually stir in water and lemon juice. Cook over medium heat, stirring constantly, until mixture becomes think and boils. Add berries, continue to cook and stir until all comes to another boil. Allow to cool, serve warm over ice cream, pancakes, waffles or add to plain yogurt. Serves 6.

  • 1 c fresh blueberries
    ½ c avocado, diced
    ¼ c cilantro
    ¼ c red onion, diced
    1 Tbs minced jalapeno
    1/2 tsp lime zest
    3 Tbs lime juice
    1 Tbs olive oil
    Dash white pepper
    1/8 tsp salt
    ¼ tsp each: cumin, coriander and cardamom

    Toss all ingredients with the lime juice and oil. Allow for flavors to blend by covering and refrigerating for a few hours. A nice topping for grilled fish.
